Frozen Banana Bites
Ingredients:
- Bananas
- Peanut butter
- Toothpicks
- Parchment paper
- Cookie sheet
- Semi-sweet chocolate chips
- Coconut oil
- Vanilla extract
Directions:
- Melt 1/3 cup coconut oil, 1 ½ cup semi-sweet chocolate chips and ½ teaspoon vanilla extract. *Make sure your dish is deep enough so that a piece of banana can be dipped in it.
- Allow the chocolate dip to cool at room temperature before using.
- Cut 3 bananas into ½ inch sections.
- Take one banana section and adhere it to another banana section with peanut butter. Creating a banana sandwich.
- Place toothpick in center of banana sandwich.
- Dip banana sandwich into room temperature chocolate dip.
- Place chocolate covered banana sandwiches on a parchment lined cookie sheet.
- Place baking sheet in freezer for 1-2 hours.
- Enjoy!
Homemade Ice Cream in a Baggie
Ingredients:
- 2 tablespoons of sugar
- 1 cup of half and half
- ½ teaspoon vanilla extract
- ½ cup salt
- Ice
- Heavy duty gallon Ziploc bag
- Heavy duty pint Ziploc bag
Directions:
- Pour sugar, half and half and vanilla extract into pint size baggie.
- Seal the baggie tight.
- Fill gallon size baggie half-way with ice.
- Pour salt over ice.
- Place pint size baggie inside gallon size baggie.
- Seal the baggie tight.
- Shake bag!! (approx. 5 mins) *you’ll know the ice cream is done when it’s hard
- Take the pint sized baggie out and run it under cold water for a few seconds to get the salt off of the baggie. (or dump ice cream into a bowl!)
