Frozen Banana Bites

Ingredients:

  • Bananas
  • Peanut butter
  • Toothpicks
  • Parchment paper
  • Cookie sheet
  • Semi-sweet chocolate chips
  • Coconut oil
  • Vanilla extract

Directions:

  1. Melt 1/3 cup coconut oil, 1 ½ cup semi-sweet chocolate chips and ½ teaspoon vanilla extract. *Make sure your dish is deep enough so that a piece of banana can be dipped in it.
  2. Allow the chocolate dip to cool at room temperature before using.
  3. Cut 3 bananas into ½ inch sections.
  4. Take one banana section and adhere it to another banana section with peanut butter. Creating a banana sandwich.
  5. Place toothpick in center of banana sandwich.
  6. Dip banana sandwich into room temperature chocolate dip.
  7. Place chocolate covered banana sandwiches on a parchment lined cookie sheet.
  8. Place baking sheet in freezer for 1-2 hours.
  9. Enjoy!

Homemade Ice Cream in a Baggie

Ingredients:

  • 2 tablespoons of sugar
  • 1 cup of half and half
  • ½ teaspoon vanilla extract
  • ½ cup salt
  • Ice
  • Heavy duty gallon Ziploc bag
  • Heavy duty pint Ziploc bag

Directions:

  1. Pour sugar, half and half and vanilla extract into pint size baggie.
  2. Seal the baggie tight.
  3. Fill gallon size baggie half-way with ice.
  4. Pour salt over ice.
  5. Place pint size baggie inside gallon size baggie.
  6. Seal the baggie tight.
  7. Shake bag!! (approx. 5 mins) *you’ll know the ice cream is done when it’s hard
  8. Take the pint sized baggie out and run it under cold water for a few seconds to get the salt off of the baggie. (or dump ice cream  into a bowl!)
  9. Enjoy!
